some of the software I mentioned won't work in the emulation environment, mainly problem with accessing the parallel and serial port (yes many of the software still uses them). Another problem that do you really want to install a mac in the machine and run your software under a pc emulator package or install a rack mount pc and run the application natively?
I don't know much about the Mac, but I believe it's better than a PC in some way. However, I must use a PC because of reasons above.

I've worked on a varity of OS platforms because I have to know what my clients have. This ranges from PCs through OS/2 (remember that), to MAC, to Linux, to AIX and other Unix clones, and MVS/CMS etc etc etc.
One very important lesson I've learnt is that it isn't the OS that's important, its the application software that matters, in the case of this thread, photo editing software. Whichever platform has the most usable and most powerful photo editing suite then work with that platform. - Roy
